I have had those and they're actually phenomenal. If you want to replicate scrambled eggs, that's spot on. (Everything by that brand is excellent aside from veganaise; they're the best vegan "cheese" by a mile.)
And to answer your question: very few vegetarians/vegans are such because they do not like the taste of meat. Some have a moral objection to the killing of animals and/or the ecological effects of farming. Others, such as myself, have stomach (or other health problems) that makes digestion of meat extremely painful. In both of those cases, meat/dairy substitutes provide a greater variety of meal choices for us.
